Rice is the star of the show with our paella. For this dish, we make fresh seafood stock, toss it in with rice and imported squid ink. We then slowly but surely cook it the traditional way. Once it's cooked perfectly, the rice is topped with a mix of wild caught local squid and shrimp, squid rings and lemon slices. Served with aioli sauce for a wonderful contrast of bright and umami flavors.
